Holiday Inn SouthendSous Chef

Holiday Inn at London Southend Airport is a modern, full service, 129-bedroom 4* hotel featuring a variety of spacious twin, double and executive rooms, plus luxurious suites, as well as conference and banqueting facilities and a choice of meeting rooms.

We now have an opportunity for an experienced Sous Chef to join our kitchen team and support the foodservice delivery at our successful and busy hotel.

You will be an experienced, innovative hands-on Chef, who is able to work in a fast-paced, high turnover environment. Someone with a fresh approach and a positive, ‘can-do’ attitude is essential, as you will assist in the design and delivery of a suite of bespoke menus, ranging from afternoon tea to wedding breakfasts.

You must have experience with the fresh food concept within a high-volume restaurant, and banqueting experience will be beneficial. You will also have a proven track record that demonstrates these skills and be an effective & inspiring leader in kitchen management.

You must be organised, an excellent communicator with a good eye for detail and know what controls are needed to meet budgets & deliver high standards of service.  You will also hold a minimum of a L2 professional cookery qualification or equivalent with a passion for food safety.

Your priorities will include:

  • Assist Head Chef with the smooth day to day running of the kitchen environment
  • Assist with the creation of menus as and when required and working with other department managers to ensure an effective delivery of service requirements
  • Taking responsibility of the Kitchen service in the absence if the Head Chef
  • Ensure all kitchen staff comply with company Health & Safety requirements and Food Safety Management Systems - provide training as necessary to all team members
  • Ensure all kitchen equipment is kept in good condition and any faults are reported
  • Demonstrate flexibility in your job role to ensure the needs of the business are met
  • Participate in all training & development required for your position
  • Assist Head Chef with the development of the kitchen team to support continuous improvement and enhance skills creating a positive culture within the kitchen
  • Accurately assess the needs of the business in terms of staffing levels/rosters to ensure payroll budget is maintained and update online rota in line with weekly deadlines
  • Assist Head Chef with managing purchasing levels and stock controls to ensure delivery of due diligence is maintained
  • Work within agreed budgets to maximise revenue at all times.

Shift patterns can include early morning starts 0700 to 1500, late evening finishes 1500 to 2300 and occasionally split-shifts, 0700am to 1100 and 1800 to 2200.

The striking, fully sound-proofed 1935 Rooftop Restaurant and Bar sits at the top of the five-storey Holiday Inn Southend, has consistently been accredited an AA Rosette for its outstanding food quality over the last 3 years.  The restaurant can accommodate over one hundred customers, as they gaze out at the panoramic views of the airport and surrounding area.
